Tequila is a finely crafted spirit, regulated by the Mexican government, standards similar
to the French laws governing Cognac. By law, tequila is made in specific regions of Mexico
and from one species of blue agave that gives it a distinctive flavor and taste. So today, only
spirits made within the confines of this region can bear the name "tequila". If
produced elsewhere, it must be called "Mezcal"! Just as champagne is from France, the
Napa Valley can only produce sparkling wine! Tequila is Mezcal...Mezcal is not always tequila!
Some Mezcal (produced outside of the tequila region) is made with an agave root worm in the bottle
as a mark of authenticity. It is also said to indicate quality: if the worm is intact, this is a
sign of purity. The worm is NEVER in tequila, only in Mezcal!
Tequila comes in four styles: silver, gold, reposado and añejo.
The agave plant that tequila is made from is about 10 years old before it is harvested for tequila.
A pineapple like core, weighing up to 150 pounds, is cut out of the agave plant and cooked to produce
the tequila. The juice is then fermented and can be
bottled clear (white or silver) or aged a
minimum of one year in wood, but it is sometimes aged in smaller oak barrels for up to seven years!

Eight hundred million acres of blue agave plants are growing today in the state of Jalisco. Remember
it takes 10 years to reach the age of tequila.
